Roast Pork (Lechon Asado)



Ingredients:


Pig Shoulder or Paleta (about 10.lbs)


Garlic Salt
Cumin

Salt

1 Whole Onion

1/2 of A Whole Garlic

2 or 3 Limes

5-6 Sour Oranges





Lechon Asado. The Secret to my Roast Pork is to season it very little before putting it in the oven. I know this sound strange, but trust me it comes out Delicious.
First make sure to wash the pork very well with lukewarm water and place in a aluminum. Next, with a knife poke a couple of holes all over the pork, but not on the fat side, and please make sure you do not cut through foil tray. Next you want to rub cumin all over and then sprinkle garlic salt all over. Now your ready to place in the oven for several hours. Make sure the Fat of the Pig is facing up I'll explain why a little later on. Depending on size of the Pork it should take about 4-5 hrs on Bake at 350 Degrees. Be on the look out so you don't over cook it. Then about ten minutes before you take out the Roast Pork, you will make what's know has the mojito or sauce. Granulate up about 5-6 garlic cloves with a teaspoon of Salt and then Put in a large Measuring Cup or Medium bowl. Next you will add 1 entire sliced onion, the juice of 2-3 limes and the juice of 5-6 Sour Oranges. When you mix all these ingredients together it should make a full cup from a measuring cup (filled to the top). The Juice of the lemon and the sour orange should equal no more then one cup. Now when Pork is it's nice and toasty take out and put it on a flat try for easy cutting. The Fat of the pig should come out in one big single piece, place that on the side for now. After you cut the pork in chunks & pieces, get a large spoon and pour sauces or (mojito) all around, saving a little mojito for later. Now you get the skin of the fat of the pig and put your oven on boil for about 30 seconds, you really got to watch it because it will burn. Then you cut into big pieces and place on top of the rest of the pork and again, put some mojito on top of this as well. The crispy fat of the pork is know as pork rhine's or (chicharon).
